If you know me, you would know that I love avocados! We live in Avocado country! Avocado shakes, avocado the guacamole, tempura avocado and even avocado straight, you get the idea. I love it’s creaminess and how you can create it to taste like different things. Sweet, savory, sour. You name it, I will eat avocado any way it’s made. Now, my two older kids claim they don’t like it. I beg to differ because they ate it A LOT as babies and toddlers. So I think someone switched kids on me.
Now you all know what happens when you get on Pinterest? Yup, you know who you are. You get sucked into it. Pinning all kinds of stuff. Clothing styles, photography tips, books you like, gadgets, decorating ideas and FOOD! I’m into the FOOD…I have a confession, I’m a foodie! Like my former pastor said…we exercise because we love to eat food. That is me. I will run and keep running or exercise so I can eat good food. So one day while looking for a Caramel Cake recipe for my birthday. My mother in law asked me to look for a recipe of a cake I would like to have for my birthday. Something she could make. So while looking for the perfect Caramel Cake recipe. I ran into www.blissfulbblog.com/ and saw a recipe Creamy Avocado Pasta. It was calling my name which means I WILL make it. It had me at Avocado. LOL! It was just a matter of when. So last Friday I made it!
I made it a little different than the recipe on the blog. I threw in a few different things and eliminated a couple of ingredients for the sake of my two older kids. It ends up they liked it and even my 9 month old did too. Well now, he is my offspring and he maybe a foodie himself.
3 limes
Handful of Fresh Basil
4 Cloves of Roasted Garlic
Roasted Cherry Tomatoes
1/4 of boneless chicken breast
1/2 tsp of Salt
1 Box of whole wheat pasta(I used Linguini)
1/2 Cup of Shredded Parmesan or Pecorino Romano Cheese
2.Toss cherry tomatoes and garlic in olive oil and roast them in the oven for about 25 minutes.
3. In a pan, throw in chicken breast with a little olive oil and season with salt and paper. Cover it with lid and cook it at low to medium heat. Flip it once. Check to see chicken cooks through. Once cooked, cool it and then shred it with your hand. (Omit this part for you non chicken eaters.)
4.Boil Hot Water for your pasta. When it’s ready, add your pasta. Follow the recipe on the box for how you want your pasta to be cooked. Once it’s done, save a cup of the pasta water, then drain the pasta and set it aside.
5.While pasta is cooking, you can make the avocado sauce. Take out avocado pits and scoop out the avocados. Put avocados in the food processors along with handful of basil, lime juice, roasted garlic cloves and a 1/4 of shredded cheese.
4. Once pasta is cooked. Mix it with the o-so-yummy avocado sauce and shredded chicken. Mix it well. Add a little bit of the pasta water you saved. See if you like the how the sauce has coated the pasta if you think it needs more pasta water, just add it as you please. Once all the pasta is well coated. Plate it. Add the roasted tomatoes on top and sprinkle a little shredded cheese.
